Classic Apple Cinnamon Muffins
I have been craving fall so much this year. It has always been my favorite time of year - fall through Christmas (my absolute favorite) but this year I have been wanting it to be (at least somewhat) crisp and being able to cozy up with my favorite comfort foods and then Hallmark movies!
I am guilty of already putting my seasonal stove top potpourri on over the weekends when I have been cleaning and started to bake some fall inspired treats.
Which brings me to this post - I wanted to make muffins. And usually I try to make things on the healthier side. But I didn’t have the patience or honestly the money to spend on some of the healthier ingredients this year. So, these muffins are all of your basic pantry items. I am all for making treats that are more nutritious, but if you can’t afford all of those specialty ingredients I still say it is better to be making your baked goods from home than to be buying them from a box. You can control the sugar and add in more nutritious and fresh ingredients, as in the case of these amazingly delicious apple muffins!
I have really gotten in the habit of making things like this for the boys because it is more cost effective and it gets them involved in the kitchen! They look forward to baking and cooking so much now and I personally think it’s a great skill to teach kids. It helps them learn how to make better decisions with foods and gets them to be creative in the kitchen! We will see if the interest continues as they get older, I can only hope!
For these muffins you have the option of making them with a crumble. I have included how to make it here, though for some reason I still struggle to get the consistency just right! I either over or under soften the butter and it becomes a mess! This time I let one of my twins mush the butter in his hands, after he washed them of course, because who knows where those toddler hands have been, and it really helped to get it to a room temp and soften to create the correct type of crumble- and of course he had SO much fun doing it!
You can also adjust the amount of cinnamon in the actual muffin. I will admit that I didn’t really measure this one. I eyeball it and I estimate it came to 1 - 1 ½ teaspoons, so I say start at the lower end and then increase if you think it needs a little more kick. You could also use an Apple Pie seasoning which I think would amp up the flavor even more! Trader Joes used to have a really good one!
You can make these as mini muffins or regular sized. I did a pan of large muffins and then mini. If you make all mini muffins it will come out to make about 48 muffins! And if you are doing Weight Watchers, like I am, it is 3 points for a muffin (mini). So, you can enjoy some of these too even with all of the buttery and sugary goodness! Hey, it’s the comfort food season, you have to indulge just a little bit right!?
Okay on to the recipe….
Classic Apple Cinnamon Muffins
1 ½ Cups All Purpose Flour
½ Cup Rolled Oats
1 ½ Tablespoons Baking Powder
½ Cup Brown Sugar + 1 tablespoon for the apples
¼ Cup White Sugar
¼ Cup Butter (melted)
1 Cup Greek Yogurt
½ Cup Milk (I used low fat and it worked fine)
3 Tablespoons Ground Flax (optional, but HIGHLY recommended!)
1 Teaspoon Cinnamon
½ Teaspoon Salt
1 Teaspoon Vanilla Extract
2 Medium Apples (of your choice) peeled and diced
2 Teaspoons lemon juice
For the Topping
⅔ Cup Brown Sugar
½ Teaspoon White Sugar
¼ Cup Flour
3 Tablespoons Butter (at room temp)
Preheat oven to 350 degrees
Prepare your muffin tray, I like to use cupcake, but you can also just spray your pan
Peel and chop your apples, place them in a bowl with the lemon juice and the sugar. This allows them to absorb some extra flavor, trust me it really made a difference from other times I made muffins!
Mix together flour, oats baking powder and salt, set aside
In another mixing bowl beat together, egg and sugar until fluffy then add in the butter until combined. Then add in the Greek yogurt, cinnamon and vanilla and milk.
Add half of the flour mixture at a time until all is combined
Then Add in your apples
In a separate bowl, combine all of the ingredients for your topping. You can mix with a fork or your fingers until you have crumbles
Using a mini or medium cookie scoop (depending on the size you choose) fill your muffin tin
Then sprinkle about a tablespoon of the topping mixture on to each muffin, pushing down, very lightly.
Bake 20-25 minutes, test with a toothpick to be sure all your batter is cooked through. Then let them cool 10 minutes before enjoying!
You can store these in an airtight container for up to 3 days!
